2 T Lemon Zest
2 T Baking powder
1 3⁄4 T Lemon pepper
1 T Garlic Powder
1 T Onion powder
1 t Smoked paprika
1 t Sea Salt
2 lb Wings
1⁄4 t Liquid Smoke (Start adding my ingredients)
1 1⁄2 T Ground Cayenne Pepper
2 T Crushed Red Pepper
1⁄4 t African Ghost Pepper
1 1⁄2 t Black Pepper

Arrange 2 racks to divide the oven into thirds and heat the oven to 425℉. Line 2 rimmed baking sheets with aluminum foil, then fit a wire rack inside each. Coat the wire racks with cooking spray.

 

Finely grate the zest of 1 medium lemon until you have 2 teaspoons and place in a large bowl. Add 2 tablespoons baking powder, 1 tablespoon plus 1 teaspoon lemon pepper seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon smoked paprika. If the lemon pepper seasoning you have does not contain salt, add 1 teaspoon kosher salt. Whisk to combine.

 

Pat 4 pounds party chicken wings dry with paper towels. Add to the spice mixture and toss until evenly coated. Arrange the wings on the prepared baking sheets, spacing them about 1/2-inch apart. Bake, flipping every 20 minutes, until browned, crispy, and cooked through, about 35 to 40 minutes total. Serve hot with your favorite dipping sauce.
